I have a new favorite salad. It isn’t a wimpy skinny bitch salad that leaves you hungry immediately after you eat it either. It is thick, has curves, and lots of goodies. It is great for lunch before a long run or bike ride because it is packed with energy rich beans, naturally sweet strawberries, and hydrating spinach. If you prep all the toppings and keep them ontop a paper towel in the fridge you can dress your salad up fancy all week.
Ingredients:
Spinach
Strawberries- Chopped
Feta
Chick Peas
Green Beans
Black Olives- Sliced
Pine Nutes
Edamame
Cherry Tomatoes- Halved
Cucumbers-Thinly Sliced
Italian Dressing or
Olive Oil and Balsamic Vinegar
both are good
Chop, Toss, Feed.








Now that is my kind of salad. When it’s nothing substantial, I end up hungry like 15 minutes later. This look delicious!
