I completely stole this idea from this crazy delicious brunch I had at Black Sheep. I saw this on the menu and it had every delicious item you could ever imagine smothered on top of French Toast. I’m talkin’ gruyere cheese, country ham, caramelized pears, red wine onions, and lots of maple syrup. Definitely weight watchers approved. I recreated this on Sunday and could not be more happy with my version, that I tweaked with what I had on hand and what is in season. Take a look:
French Toast Ingredients
1 large loaf of challa bread
6 large eggs
1/2 cup of vanilla soymilk
1 cup of milk
1 tablespoon of honey
1 tablespoon of maple syrup
1 teaspoon of vanilla extract
1/2 teaspoon of almond extract
1/2 teaspoon of maple extract
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/2 teaspoon of salt
Butter
Slice bread into thick slices and heat butter in large pan. Beat all other ingredients until well incorporated and then dip slices and cook until golden brown.
Toppings
1 package Brie
1 package salty country ham
1 white onion sliced
1/2 cup of red wine
4 tablespoons of butter
3/4 cup of sugar
1/4 cup of water
1 tablespoons of butter for onions
Preheat oven to 400. Caramelize onions until brown in butter on stove top.Add red wine and reduce until onions are flimsy. Place butter, water, and sugar in a dish in oven until melted. Add sliced peaches and cook for 30 minutes. Top the challa first with opinions then with ham (chopped finely), and finally with Brie. Place in oven and melt for 5 minutes, top with peaches, drizzle with maple syrup.

I want to make this for all my meals throughout the day.
