Want an incredibly tasty and seasonal recipe? Fetch some of those peaches that are mega on-sale at the grocery store and grill them! Stacking peaches and burrata may seem like an odd combo, but with a simple marinade and a few minutes under fire, the peaches will tenderize and taste less like fruit more like a twist on a traditional tomato caprese. This savory little dish that is not only delicious, but also looks very impressive, especially for how quick it is to fix.
Slice your peaches into quarters, toss with olive oil, salt, pepper, garlic powder, and balsamic vinegar and let them sit for at least ten minutes. Grill them for 4-5 minutes each side, or just sear them on a heated (hot) pan. They will soften and caramelize either way, but unless your pan has griddle marks the peaches won’t get those sexy tan lines… they add effect.
Slice fresh mozzarella or burrata into quarter inch rounds and then stack the peaches in between. Garnish basil and arugala leaves and drizzle the excess dressing you used for the marinade.
This takes less than 10 minutes and is a huge hit!
